Thrifty Thursday

Money is tight in our home.  I am fortunate to be a stay at home mom, but with that comes some sacrifices in the financial department.

I am constantly on the look out for budget friendly meals that me and my family will enjoy.  I figured there are a few of you out there that are also in the same situation as us and you would not mind me sharing some recipes that have been a success in our home.

Here is the first recipe for the new Thrifty Thursday weekly blog post.

Country Corn Chowder

1lb breakfast sausage (cooked, crumbled, drained)

8oz elbow macaroni (cooked)

4oz cream cheese

1/2 bag frozen niblet corn

a dash of salt, pepper, garlic powder, onion powder

Mix everything together and serve warm.  Since corn is not the most nutritious of vegetables you may want to serve it with another veggie side item.

This serves 4-6 people depending on portion size.

  1. Hey – we just had this Thursday. It is also Nate Rector’s favorite Lacey meal – so I shared the love with him!

    (And if you use that sausage from Bruce’s place – makes it so much more delicious!)
